The Japanese Sweet Potato has changed my life. Besides being beautifully violet in color, it is extremely sweet making it a good option for both meals and as dessert. Japanese sweet potatoes consist of over 60% water content and are a lower calorie option compared to other carb sources such as rice. This nutrient-dense tuber is a great source of dietary fiber and Vitamin C, and should absolutely be on your menu for Thanksgiving next week. Stay tuned for all of my healthy Thanksgiving recipes…

This morning I used it to complement my protein/veggie scramble of chicken, shitake mushrooms, onions, heirloom tomato, zucchini, kale, & fresh basil. And ofcourse I top everything with an egg. This dish is #Paleo approved.
