Paleo Macadamia Nut Brownies

Dessert #1 Done! Paleo Macadamia Nut Brownies: macademia nuts, almond butter, sunflower seed butter, coconut milk, eggs, unsweetened cocoa, dates, dark chocolate chips…and LOVE.

I LOVE this recipe because it is grainless and uses dates as the natural sugar (ok and a handful of dark chocolate chips too). Macadamia nuts are an excellent option because of their rich, satiating texture and flavor. They got a bad reputation for years because of their high fat content. However, they are mostly monounsaturated fat (~84%) and contains palmitoleic acid, the type of monounsaturated fatty acid that may speed up fat metabolism making it less likely to be stored as fat. It also raises HDL and lowers LDL and decreases your risk of heart disease and stroke.  Sounds (and tastes) good to me!
