Get Up And Go Green With My Power Greens Frittata

Hugo’s Restaurant in West Hollywood is one of my go-to healthy eateries. Their vegetable frittata is simply inspiring so I decided to create my own version. Here she is in all of her green goddess glory.

  • 1 large egg
  • 2 egg whites
  • zucchini, broccoli, kale, spinach, asparagus and whatever greens you’d like to include. Steam or sauté before mixing in with eggs.

Put in ovensafe ramekin or pan on 350 degrees for about 20 minutes. Perhaps broil on low towards the end to help slightly brown. Top it off with unsweetened applesauce and organic pea sprouts and enjoy. Consider yourself powered up and fueled for your day!
